KOMBUCHA BREW Friday night fermentation. Steps of my kombucha brew. I will detail these steps as if you are new and starting your first batch. Boil water and pour into a large half gallon mason jar 3/4 of the way. Put 5 tea bags and a cup of sugar per jar. Let it cool to room temperature. Then add the Scoby and 1 cup of kombucha to the jars with tea and sugar and cover with cloth and a rubber band to ferment in a dark cupboard for about 7 to 14 days. After a week, taste your brew and see if it’s to your liking or needs to ferment longer. The longer it ferments the more tart and vinegary it becomes. Once it’s ready, set aside the scobies (each brew you get a new scoby - it’s part of the fermentation process) and reserve a cup of kombucha for each jar to restart the process. Take the remaining kombucha and add some fresh juice combinations to it. For your new batches the process starts again. Be creative with flavors, sip slowly, savor the goodness and stay well.
